Kansui gives the noodles their signature elasticity and yellow hue, creating the distinct chewy texture that defines authentic ramen. At RamenYa, we strive to recreate the true taste of Japan by importing premium noodle flour directly from Japan. This commitment to quality is what sets RamenYa’s noodles apart from others.

Noodle-Making Process

At RamenYa, we craft fresh noodles daily using premium flour imported directly from Japan. The dough is rolled multiple times to achieve a smooth surface and consistent thickness. Using a specialized noodle machine, we cut the dough into uniform sizes and portion it precisely for each bowl of ramen. These noodles are designed to maintain their chewy texture even when immersed in hot broth—they won’t easily become soggy. Our experts carefully adjust the thickness and texture of the noodles to harmonize with the broth. Because ramen isn’t just about noodles—it’s about the perfect balance of broth, toppings, and noodles coming together in one bowl.

How to make RamenYa Noodles

  1. Mixing our dough using premium Japanese flour.
  2. Pouring the dough into the noodle machine to make dough sheets.
  3. Roll the sheets multiple times for smoothness, and to ensure perfect thickness.
  4. Sprinkle more flour for freshness.
  5. Slice dough into ideal size and portion for each ramen bowl.
  6. Noodles are then prepared for use at RamenYa or shipped to Pora in New Jersey.
